Meatloaf Stuffed Peppers

This is scrumptious recipe if you love homemade meatloaf and enjoy munching on fresh peppers like we do. This is a great appetizer for 2 people or as a meal served with Cauliflower "mashed" potatoes for a good balance. Compliant with all phases of Ideal Protein including Phase 1.


12 oz of lean ground beef
4 stalks celery, finely diced
1/4 of an onion
2 eggs(Phase 4 only), or 1 plain omelet pack.
1/2 teaspoon of salt
dash of pepper
2 large bell peppers


Preheat oven to 375˚
Crumble the ground beef into a mixing bowl, combine finely diced celery and diced onion into the mixing bowl add the salt and pepper and eggs( phase 4 only), omelet mix ( phase 1,2,3) and mix all together don’t mash it tightly though just mix, set aside
Split the peppers from top to bottom making 4 halves
Divide the meat mixture between the 4 halves
Place in a baking dish and cover with foil bake for 45 minutes at 375˚
Uncover the last ten minutes so the tops will brown up

Ideal Protein Stuffed Mushrooms

Ideal Protein Stuffed Mushrooms Recipe

1/2 lb of julienned ham
1/2 packet of IP Salt and Vinegar Ridges crushed
4 Lg Portabello caps
3 cups of portobello mushrooms chopped

1 cup cucumber chopped
1 cup radish
1 Tbsp green onions chopped
1 clove of garlic minced
2 Tbsp of Walden Farms Balsamic Vinaigrette dressing
1 tsp Olive Oil
S& P to taste


Marinate the 4 large mushroom caps with olive oil and garlic. Chop the remaining mushrooms. Slowly cook green onions in olive oil marinade from mushrooms. Add chopped mushrooms to pan and cook until all water is evaporated. Add chopped garlic and cook for 1 minute. Add dressing with ham, mix well.


Recipe for Garlic Chicken

6 boneless chicken breasts
1 teaspoon salt
2 teaspoons paprika
2 teaspoons pepper
10 cloves garlic, unpeeled*


Mix the seasonings; rub all over the chicken. Cover the chicken with garlic cloves. Cook on LOW 6 hours or until the chicken is done in slow cooker. You can add other flavors, seasonings, spices, this is my base sometimes I use curry, jerk spice to change it up a bit.

Crust-less Spinach Quiche


This delightful appetizer serves 2 and makes a great breakfast for egg lovers that are trying to eat less bread.


2 ounces green onion, chopped
2 medium mushrooms, sliced, 1 ounce
10 ounce package frozen chopped spinach, thawed and drained very well
¼ cup red pepper
2/3 cup fat free ham, diced, optional
5 eggs
1/8 teaspoon pepper
1/2 teaspoon salt


Sauté the mushrooms until tender. Add the spinach and ham; stir and cook until heated and mixed well. Greased pie plate with spray. Mix in the spinach mixture. Beat the eggs, add onions, salt and pepper. Pour evenly over the spinach. Bake 350º for 25-35 minutes. Makes about 6-8 servings. Options- make a base out of sliced zucchini or change the vegetables based of preference.

Chocolate Bark

Healthy Chocolate Bark Recipe

IP chocolate pudding (or any pudding of your choice)

(the next 2 ingredients are not needed if you are not doing the choc pudding)
-2 tbsp cocoa powder
-1tbsp instant coffee

2 tsp splenda or stevia
8 oz of water (depending on consistency, could be less)

pour in aluminum pie plates or place on parchment paper on cookie sheet.
Freeze (30-45min)
Take out of freezer, break chocolate into pieces
Place in container, keep in freezer.

Cabbage Rolls

Cabbage Rolls

8 large cabbage leaves, par boiled
1 lb ground turkey
1 Small onion chopped small
8 button mushrooms, finely chopped
1 Small bell pepper and or zucchini, finely chopped
1 can diced tomatoes w/herb and garlic
Garlic Sea Salt and pepper to taste


Preheat oven to 350 degrees.
Brown turkey and add onions, bell peppers and mushrooms. Drain well, spoon into cabbage leaves (should be softened but still bright green), wrap like a burrito, hold closed with toothpicks and place in baking dish. Pour tomatoes over the rolls and bake for about 15-20 minutes. You could also use small amount of cauliflower faux rice for filling.

Spicy Chicken legs

Spicy Chicken Drumsticks Recipe

• 2 tablespoons grapeseed oil
• 2 teaspoons paprika
• 1 teaspoon dried thyme
• 1 teaspoon chili powder
• 1/2 teaspoon dried cumin
• 1/2 teaspoon garlic powder
• 1/2 teaspoon sea salt
• 1/2 teaspoon pepper
• 1/4 teaspoon ground nutmeg
• 8-10 skinless chicken legs scored, rinsed and patted dry)


In a small bowl, mix oil and spices. Put chicken in ziplock bag pour marinade over meat, close bag rub chicken with spice mixture, refrigerate for 30 minutes or more. Arrange on a baking sheet..Heat oven to 350F. Bake chicken 40 to 45 minutes or until cooked through. Variation- You could add some cherry tomatoes or other selected veggies before baking then garnish with fresh parsley, phase permitting.
