CHOCOLATE BARK
IP chocolate pudding (or any pudding of your choice)
(the next 2 ingredients are not needed if you are not doing the choc pudding)
-2 tbsp cocoa powder
-1tbsp instant coffee
2 tsp splenda or stevia
8 oz of water (depending on consistency, could be less)
Shake,
pour in aluminum pie plates or place on parchment paper on cookie sheet.
Freeze (30-45min)
Take out of freezer, break chocolate into pieces
Place in container, keep in freezer.

Low Fat frozen yogurt and fruit.
Here is a quick healthy snack that taks a little bit of pre-planning. Chopped up fruit in low fat yogurt and placed in the freezer. Get it good and chilled to eat it with a spoon or freeze it all the way if you want a yogurtsicle (just be careful not to keep it frozen too long).
Granola Squares
First Layer
- 1/2 cup melted butter
- 1 cup rolled oats
- 2 tbsp. sesame seeds
- 1/2 cup brown sugar
- 1/2 tsp. salt
- 1+1/2 cup of whole wheat flour
- 1/2 cup wheat germ (or we have subbed an extra 1/2 cup of whole wheat flower instead)
- 1 egg yolk
Directions
All the above can be mixed in an oblong pan 9x13". Spread and bake at 350F for 10 minutes.
Second Layer
- 1/3 cup melted butter
- 1/3 cup honey
- 1 egg white
- pinch of salt
- 1/2 cup brown sugar
- 1/3 cup raisins
- 1/3 cup walnuts
- 1/3 cup coconut
- 1 tsp. vanilla
Directions
Add rolled oats and sesame seeds to second layer. Spread second layer ingredients on first layer ingredients and bake at 300F for 20 minutes.
Pure Almond Butter with Apple Slices
Just slice up an apple and add a little bit of pure almond butter on the end.
Almond butter is similar to peanut butter, however it is made purely from ground almonds. It is also a great alternative for people who are allergic to peanut butter.
This is a very nutritious snack and will give you a lot of energy from the high amount of protein from the almond butter. This also tastes really good.
This is a fantastic mid afternoon snack that will fill you up and satisfy your hunger. Very nutritious, delicious and very fast and easy.
You can find this in most superstores and even buy it in a larger size container at Cosco.
Roasted Asparagus
It is a shame I did not discover Asparagus earlier in life, and here is the only way to prepare it.
Washed Asparagus
Vegetable Oil
Pinch of Pepper or other seasoning
Directions:
Mix your seasoning with the oil and use a brush to paint them evenly. Pop them in the oven for a few minutes then turn them continuing until they start to get the slightest brown or outer crispyness depending on your preference.
Fake Crab (pollock) and Veggies
There are so many great options if you have a taste for pollock. Try it with sliced cucumbers and tomato or mix it with a salad and a slight sprinkle of dressing.

Apples and squeezed lemon
Sounds odd doesn't it? It may surprise you...
Just sliced apples with fresh lemon squeezed over top.
The sweet & sour work great together and really make for a wonderful combination. Pink ladies are the best apples to use, but experiment with all of your favorites!
