Wildberry Muffins

Ideal Protein Berry Muffins
Ingredients: 

-1 Package of Ideal Protein Crispy Cereal
- 1 Package of Ideal Protein Wildberry Yogurt Drink Mix
- 2 Egg Whites, beaten slightly
- ½ Teaspoon Ground Cinnamon
- 1 Tablespoon Splenda/Stevia
- 4 Teaspoons Olive Oil
- 1 Teas of Baking Powder
- 3 Tablespoons of Water

Directions: 

- Preheat oven to 350°F. Spray a standard sized muffin tin with olive oil spray.
- Before opening packet, crush IP Crispy Cereal until fine (powder consistency.)
- In a medium bowl, mix beaten eggs, ground cinnamon, Splenda/Stevia, olive oil, and baking powder. Once mixed, add in Wildberry Yogurt and Crispy Cereal. Slowly mix in water.
- Spoon mixed-up batter into muffin tins. (Makes 5 muffins.) If there are empty muffin cups in your tin, fill ¼ of the way with water to allow other muffins to bake evenly.
- Bake muffins for 10-12 minutes or until toothpick inserted comes out clean.

I find that adding oat fiber helps with the collapsing issue. I realize oat fiber is not on the program however it is 0 calorie 0 carbs and 0 gr fat entirely fiber and I figure if Walden Farms products are OK why not oat fiber? I bought mine at iherb and I add 1 tbsp. or so and helps with the consistency.

I do not add oil or whole egg myself. Thanks!

Interesting. I will have to look into this. I believe that iherb is an american company. The prices look great if you live in the U.S. If you live in Canada, my favourite on-line resource at the moment is Low Carb Grocery. They have an on-line outlet in Western Canada and another in Eastern Canada. 2-3 days shipping. Never an issue. Great to deal with.

I finally figured out how to make these so that they do not shrink !!! Baking them a little longer helps but these are the changes that I made: (1) use 1 egg instead of the egg whites (2) decrease the olive oil to 1 teaspoon (3) add 1 Tablespoon milk (4) add 1 teaspoon vanilla. (5) I put these into a mini muffin pan ... it made 13 mini muffins ... and (6) I baked them @ 350 degrees for 17 minutes. They came out a lovely golden brown colour but did not shrink. I love mini muffins as they seem to go so much farther and you can stretch them through the day, if you wish. This constitutes 2 non-restricted IP's.

Just made these, FANTASTIC! I made Luella's modifications and they turned out fantastic. I used mini muffin pan but only made 10 (easier to divide into 2) I will be making these more often :) Thanks so much for sharing.

These are my staple! I decrease the egg white to 1 and decrease the oil to 1 teaspoon but add my 1 Tablespoon of milk and 1 teaspoon of vanilla. They do collapse but I put WF jam on top and it creeps into the nooks and crannies made from the collapse. yummy!

Xcat, bake them a little longer and you may find that they will not collapse. I love to use mini-muffin tins and bake for about 15 minutes. That way, you get more little mouthfuls (anywhere from 10 - 13 per serving) and they are fun to pop in your mouth. Pure decadence !!

I made these. Mine collapsed after baking but I omitted the oil altogether but they tasted yummy with walden farms choco peanut butter as icing. Yummy.

I made these tonight and although tasty they did not look like yours. They rose well and then wehn I took them out of the oven they fell !! I tried doubling the recipe , so maybe that was the problem. Is the batter suppose to be super thick ?

See my comment above. I made a few minor changes to the recipe, made them into mini muffins (made 13) and baked them for a little longer. Let me know if this helps.

Mine fell, as well. I have eaten some as is and have split them other in half (I made 6) and used Walden's Raspberry spread on them. They taste more like little scones than puffy muffins but are healthy and delicious.

Just finished making these tasty little snacks - SO impressed!
I didnt add the stevia and found them sweet enough without it. Next up, the pizza recipe from this site!

I made these today and they turned out really well. I did, however, use two whole eggs so that counts as 4 of my proteins for the day. I also split them and put Walden's Farms Raspberry jam on them. They tasted similar to scones and I had all of them for brunch. (Made 6).

I will try these. I bought the Wildberry Yogurt Drink Mix and do not not like it by itself. However, as a mix for these muffins, they should be quite good. Thanks for the recipe idea.

I'm going to try making these tonight - but use the chocolate drink mix instead (it's all I have in stock right now). I'll let you know how they turn out!

It would be helpful to know serving sizes for these recipes - like can I eat all 5 of these muffins at one time? LOL

IP Crispy Rice Cereal counts as 1 non-restricted. The Wildberry yogurt is also 1 non-restricted so YES ... you could eat them all at once if you wish and count them as your 2 non-restricted for the day.
