Just made these & they are delicious.. how many in a 'serving' of the 5? counted as 2 packets?? here :) & thanks!!

To the person who made the 24 muffins using oatmeal and banana pudding, you can eat all of them for breakfast, if you wish. You would count them as 1 Restricted and 1 Non-Restricted. If you decide to split the recipe and eat 12 each day, count them as a 1 Restricted for each day. PLEASE NOTE: The new oatmeal that is coming out is NON-RESTRICTED !!!!! Check with your Ideal Protein coach to find out if you have the old Restricted or the new Non-Restricted one and count them accordingly.

We just tried making these tonight and I think we may have made a mistake, Are you supposed to mix the wildberry yogurt and crispy cereal with water before adding it to the bowl of mixed ingredients?

Roxy's picture

In the oven right now... cant wait to try them! Does anyone think the banana pudding mix could somehow be incorporated to make banana muffins? Or even better a chocolate drink mix + banana pudding mix?

Luella's picture

I mix them all the time. It seems that you can use two packets of almost any drink / pudding. The baking powder will make them puff. If you use a slightly rounded teaspoon of baking powder and let them sit for a couple of minutes, you will be surprised at how the mixture will increase in size. Make sure that you bake them a little longer than what this recipe calls for and they will not shrink. Also, when I make mini muffins, I can get as many as 24 by using two packets of product. A great mouth-popping treat.

Roxy's picture

Great to know! I have to play around with things, but Im sometimes hesitant to try because I dont want to waste the IP packages on a whim....

Luella's picture

I agree. If you like, I could send you the basic recipe that I use to get the 24 mini muffins ... bite size and totally legal on Phase 1. How did yours turn out?

Roxy's picture

Oh thanks I'd appreciate having your recipe. Mine turned out ok, I used muffin cups which I dont think I'd bother with again as I found the bottoms stuck to them. They are definately lacking something for my own personal taste but will do the trick if I need to grab something quick. Im going to keep trying until I get it right :)

2 packets of Ideal Protein product. I like to use 1 oatmeal (restricted) and one pudding (non restricted) or drink. It is the powder that counts. I like to use banana but also use chocolate, blueberry or wildberry. (You are limited only by your imagination). Here goes:

Start with:
1 egg, beaten

Add the following, beating well:

1 rounded teaspoon baking powder
2 rounded teaspoons Splenda
! teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon nutmeg
1 teaspoon vanilla
2 teaspoons olive oil
2 teaspoons milk

2 packets of dry powder
5 tablespoons water

If you let it sit for a couple of minutes, the baking powder will make the batter a little puffier.

I use a (24) mini muffin tin (sprayed with Pam to ensure that they fall out and do not stick) and by using a 1" scoop (levelled), I can get 24 mini muffins. ( If you use a 1 1/2" scoop, you can get about 18.) Use a spatula to scrape your bowl and get every little bit because it could be enough batter for another one !!!

Bake @ 350 degrees for 15 minutes.

These come out with lots of flavour and are a great way to stretch two Ideal Proteins.

If you are so inclined, you could dip them in Walden's sauces or syrups but I find that they are sweet enough and moist enough on their own without having to add anything else.

ENJOY !!!!!!!!!!!!!!!!!

I find that adding oat fiber helps with the collapsing issue. I realize oat fiber is not on the program however it is 0 calorie 0 carbs and 0 gr fat entirely fiber and I figure if Walden Farms products are OK why not oat fiber? I bought mine at iherb and I add 1 tbsp. or so and helps with the consistency.

I do not add oil or whole egg myself. Thanks!

Luella's picture

Interesting. I will have to look into this. I believe that iherb is an american company. The prices look great if you live in the U.S. If you live in Canada, my favourite on-line resource at the moment is Low Carb Grocery. They have an on-line outlet in Western Canada and another in Eastern Canada. 2-3 days shipping. Never an issue. Great to deal with.

I finally figured out how to make these so that they do not shrink !!! Baking them a little longer helps but these are the changes that I made: (1) use 1 egg instead of the egg whites (2) decrease the olive oil to 1 teaspoon (3) add 1 Tablespoon milk (4) add 1 teaspoon vanilla. (5) I put these into a mini muffin pan ... it made 13 mini muffins ... and (6) I baked them @ 350 degrees for 17 minutes. They came out a lovely golden brown colour but did not shrink. I love mini muffins as they seem to go so much farther and you can stretch them through the day, if you wish. This constitutes 2 non-restricted IP's.

Hi Luella,

Thank you for sharing this recipe and the update! I have been searching for a banana muffin recipe that uses a pancake and a banana pudding mix. I do not think either of these are restricted. If they are, that is ok. Can I use the same recipe that you posted and substitute the pancake mix and banana pudding mix? I will probably try it just to see how it turns out. Thanks again for your posts!

Just made these, FANTASTIC! I made Luella's modifications and they turned out fantastic. I used mini muffin pan but only made 10 (easier to divide into 2) I will be making these more often :) Thanks so much for sharing.

Luella's picture

You are welcome.

xcat's picture

These are my staple! I decrease the egg white to 1 and decrease the oil to 1 teaspoon but add my 1 Tablespoon of milk and 1 teaspoon of vanilla. They do collapse but I put WF jam on top and it creeps into the nooks and crannies made from the collapse. yummy!

Luella's picture

Xcat, bake them a little longer and you may find that they will not collapse. I love to use mini-muffin tins and bake for about 15 minutes. That way, you get more little mouthfuls (anywhere from 10 - 13 per serving) and they are fun to pop in your mouth. Pure decadence !!

Great modification to this recipe... thanks!!

Cancan1997's picture

I made these. Mine collapsed after baking but I omitted the oil altogether but they tasted yummy with walden farms choco peanut butter as icing. Yummy.

Memere03's picture

I love these. Make them often

Can't wait to try these tonight!

ddough5's picture

I made these tonight and although tasty they did not look like yours. They rose well and then wehn I took them out of the oven they fell !! I tried doubling the recipe , so maybe that was the problem. Is the batter suppose to be super thick ?

Luella's picture

See my comment above. I made a few minor changes to the recipe, made them into mini muffins (made 13) and baked them for a little longer. Let me know if this helps.

Luella's picture

Mine fell, as well. I have eaten some as is and have split them other in half (I made 6) and used Walden's Raspberry spread on them. They taste more like little scones than puffy muffins but are healthy and delicious.

hammey's picture

Just looking for some good recipes to encourage my family to try this program.

Welcome :)

Gingervixen's picture

Just finished making these tasty little snacks - SO impressed!
I didnt add the stevia and found them sweet enough without it. Next up, the pizza recipe from this site!
(Never thoughg this program could be so tasty!)

Luella's picture

I made these today and they turned out really well. I did, however, use two whole eggs so that counts as 4 of my proteins for the day. I also split them and put Walden's Farms Raspberry jam on them. They tasted similar to scones and I had all of them for brunch. (Made 6).

Luella's picture

I will try these. I bought the Wildberry Yogurt Drink Mix and do not not like it by itself. However, as a mix for these muffins, they should be quite good. Thanks for the recipe idea.

I am Sam's picture

I'm going to try making these tonight - but use the chocolate drink mix instead (it's all I have in stock right now). I'll let you know how they turn out!

It would be helpful to know serving sizes for these recipes - like can I eat all 5 of these muffins at one time? LOL

Luella's picture

How did they turn out? I would think that the chocolate drink mix would be very good.

Luella's picture

IP Crispy Rice Cereal counts as 1 non-restricted. The Wildberry yogurt is also 1 non-restricted so YES ... you could eat them all at once if you wish and count them as your 2 non-restricted for the day.

nmcbride's picture

So I made these using oatmeal and banana pudding made 24 mini ones so how many can I eat tomorrow for breakfast?

Luella's picture

You can eat all of them for breakfast, if you wish.
